Banana Bread!

I don't think I will ever stray from this Banana Bread Recipe. It's perfect. Full of flavor, moist... perfect....

  • 1 ½ cups sugar
  • ½ cup butter (1 stick at room temperature)
  • 1 cup apple sauce
  • 2 cups mashed bananas (overly ripe)
  • 3 eggs, lightly beaten
  • 2 ½ cups flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 – 1 ½ cups walnut pieces (at your nut-loving discretion)


Cream together the sugar and butter until smooth and fully integrated.
In separate bowl lightly beat the three eggs until there is no separation.
Add apple sauce, mashed bananas and lightly beaten eggs to sugar mixture. Mix until just incorporated. You should see some banana chunks in the batter.
Sift together and add flour, soda, salt and cinnamon to the batter. Do not over mix!
Bake at 350
For loaf pans: 35-45 minutes or until done
For cupcake pans: 25 -30 minutes or until done
