My latest varieties include: 1. Small bite-sized goodness, dipped all the way around with chocolate, sprinkled with coconut. 2. Bar sized amazingness set in chocolate and coconut. They're equally delicious, with the same ingredients.
1c. Raw Cashews
1/4 c. Freshly Ground Peanut Butter *
1pkg Dark Chocolate Chips
1/4 c. Shredded Coconut
1/4 c. Flax Seeds
1-2 T. Water
Why these ingredients are great for you:
Dates: promotes digestive health
Raw Cashews: rich in protein, iron and amino acids
Peanut Butter: heart-healthy fats & antioxidants
Dark Chocolate: antioxidants, cardiovascular health
Coconut: cardiovascular health
Flax Seeds: blood health
Here's the process:
In food processor combine dates, cashews, peanut butter, 1T water. Process until mixture starts to stick together. Add more water if needed. I test the mixture by squeezing some of the mixture together to ensure that it sticks. You'll want to make sure your mix is sticky enough to withstand the chocolate dipping. When your mix is sticky enough, mix in flax seeds. Spread on wax paper and shape into 1/2" to 3/4" thick layer.
1. For small bite-sized goodness: Cut into 1"X1" squares. Using a double-boiler melt chocolate chips. Dip each piece into chocolate and sprinkle with coconut.
2. Bar sized amazingness: Cut into 2"X2" bars. Using a double-boiler melt chocolate chips. Spread a thin layer of shredded coconut onto a plate. Dip each bar into chocolate, covering just the bottom and place onto plate of shredded coconut to cover.
